Chicken Fajita Spice Mix

Love fajitas for their versatility.

Love fajitas for their non-carb-heavy satisfaction.

Love fajitas for their quick-in-the-pan and don't-heat-up-the-kitchen in summer.
Love fajitas period.


Fajitas have been my go-to meal after a long day for ages. It's been so long that I'm thinking of (finally) changing it up a bit. Before that happens, I'd just like to share the homemade spice mix, which saves a few pennies and ensures that you can always make fajitas on a whim, rather than crossing your fingers that whatever little grocery shop on the way home will have a packet in stock.

Recipe: Fajitas & Spice Mix
Serves 2
Eat with Sauvignon Blanc

Spice Mix (equal parts):
cumin
paprika
cayenne pepper
garlic powder
oregano 
thyme
crushed red chili flakes

Fajitas:
2 chicken breasts
1 onion
2 bell peppers
juice of 1 lime
tortilla wraps

Add ons:
salsa / avocado / sour cream / cilantro / refried beans / pickled jalapenos

1) Prepare the spice mix. In a jar add equal parts of all spices. Shake well to blend.

2) Cut the onion and bell pepper into wedges. Slice the chicken into strips and salt/pepper them. In a large pan over med-high toss in the chicken strips and cook til browned (3-5 mins.) Add in the veggies and 3 tsp. of spice mix. Cook another 8 mins or so. Add in half the lime juice near the end, when things are looking a bit dry. 

3) Wrap it up with add-ons of choice.
